So before I try I heap of things that might not work... whats a way to remove baked mud stains from your 125 motor?

I never got to the bottom of the trick to keeping a nice new motor all shiny and clean.. The mud stains are caused by mud that is alkaline or acidic (either one), and reacts with the aluminium. The only way to clean it off is via another chemical reaction. A popular chemical is alibrite by septone, although this contains hydroflouric acid which has the nasty property of leeching through your body and slowly killing you (at relatively low concentrations).
You can get the motor soda blasted (baking soda used in a sand-blasting type setup), and this works ok although leaves a dull finish, but as soon as you go racing on the muddy track the motor will look stained again! So unless you can set yourself up to do this it gets expensive. You could always paint the motor black, or get it anodised, although some official (who can't really explain how anodising is any different to alkaline mud bleach) will probably disapprove.
